We were invited to visit the Capitalist Pig, a BBQ joint built in an event space called the Mad Art Gallery, which is built out of an old police station. Also, the prison is haunted.


Okay, we didn’t see any ghosties, but we did meet the talented Ron Buechele, who happens to live in the basement of said BBQ Joint / Art Gallery / Event Space / Abandoned Police Station and is a Chef and former police officer.

Pork Belly BLT

The Pork-Belly BLT is what Capitalist Pig is best known for in the press right now.  With piles and piles of bacon and  a special sauce it’s a real crowd pleaser.


The Cubano is pretty dang good with it’s tender, toasty bread and the incredibly tender and juicy ham and pork.  It’s one of the better Cubano sandwiches we’ve had.

Whoa… wait a second….

Did we just see a G-G-G-G-G-G-


Brisket Burger

The Brisket Burger is made from a 1/2 pound of ground brisket and reminds us a little of the burger you could get at the now closed Three Flags Tavern

You can even get an egg on it to give it the extra ooey-gooey kick (though Charlie forgot to ask for one, which is why this shot doesn’t have it).

They’ve got some awesome sides as well! Including some tasty “like when you were a kid” mac’n’cheese!

The potato salad is another favorite of ours. Great flavors and textures and not too heavy!

BTW – They have a full bar at the Pig plus tons fo local sodas and beers!

Cornbread Muffins

The item they were most excited about were their Cornbread Muffins, and with good reason.  They are flavorful, moist, and come with some rich, creamy butter!

Chef Ron Buechele is quite an interesting character and can seem a llittle intimidating at first but is in reality one of the friendliest people we’ve met and will talk your ear off if you get the chance.

The whole thing started when he purchased an abondoned police station and turned it into an art gallery and then added the BBQ after he felt he had the proper skill as a chef.

And yes, he lives there too.  You should totally come by sometime and get some excellent BBQ, some awesome sandwiches, and some amazing sides and give Ron a big hello if you see him!
